Thanksgiving Leftovers–10 Sandwiches

What are your favorite Thanksgiving leftovers? Mine are a wedge of pumpkin pie and coffee for breakfast, and turkey sandwiches for lunch! They seem to taste even better the next day.

If you have lots of Thanksgiving leftovers, those turkey sandwiches can get boring quickly. So try some of these delicious sandwich ideas for a change of pace.

Ten Tasty Sandwich Ideas for Leftover Turkey

  1. Open-faced–the classic. Top good-quality white bread with turkey slices. Drizzle with reheated leftover gravy. Serve with leftover cranberry sauce and/or stuffing on the side.
  2. Wrap–spread mayonnaise mixed with a little pressed garlic on a flour tortilla. Top with leaf lettuce, sliced turkey, sliced avocado, and tomato wedges. Roll tightly and secure with toothpick.
  3. BBQ–shred turkey and heat in barbecue sauce. Then sandwich between toasted buns. Serve with coleslaw.
  4. Banh Mi–spread split baguette with mayonnaise mixed with sriracha sauce. Fill with turkey slices, sliced English cucumber, thinly sliced  jalapeño, shredded carrots, and cilantro or Thai basil sprigs.
  5. Mexican–in crisp taco shells add shredded turkey and shredded iceberg lettuce. Top with shredded Monterey Jack cheese and salsa.
  6. Panini–make a sandwich of turkey slices, cranberry sauce, and sliced Cheddar cheese using rustic bread. Then grill in a panini press or on stovetop.
  7. Hero–split a baguette lengthwise and stuff with deli meats, such as salami, mortadella, or prosciutto, and sliced leftover turkey. Add sliced provolone, roasted red peppers and shredded iceberg lettuce. Sprinkle with vinaigrette.
  8. Curry–dice turkey and combine with sliced green onion, raisins, and chopped apple. Season with mango chutney, curry powder, and mayonnaise. Spoon mixture into lettuce-lined pita pocket halves.
  9. Croque Monsieur–sandwich slices of turkey, ham and Swiss cheese, with some Dijon mustard, between two slices of artisan bread. Dip sandwich on both sides in a mixture of eggs beaten with a little milk. Then fry in melted butter.
  10. Club–layer turkey slices, crisp bacon strips, avocado slices and iceberg lettuce on a slice of toasted bread spread with mayonnaise. Top with second toast. Next, cut sandwich into quarters diagonally to form four triangles. Thread on a bamboo skewer.
